Owned by the O’Neil family, Cuttaway Hill is one of the largest vineyard properties in the Southern Highlands, with three sites. The original Cuttaway Hill vineyard at Mittagong has chardonnay, merlot, cabernet sauvignon and shiraz. The Allambie vineyard, on the light sandy loam soils of Ninety Acre Hill, is planted to sauvignon blanc, pinot gris and pinot noir. The standard of both viticulture (headed by Mark Bourne) and contract winemaking is evident in the quality of the wines, not to mention the growth in production and sales. Exports to the UK, the US, Canada, Sweden and China.

The family owned Cuttaway Hill Wines is cradled in the cool climate wine region of the Southern Highlands and owned and operated by the Bourne family on the outskirts of Mittagong and Bowral in NSW Australia.All vineyard sites are at an altitude above 550m and predominantly north-facing, providing good sunlight exposure for most of the daylight hours. Traditional harvest dates for this premium cool climate region are generally mid March through to mid May. Cuttaway Hill wines are made entirely from grapes grown in the Southern Highlands and each vineyard provides a unique character that gives the wine lover a true taste of the Southern Highlands in a glass and its national and international award winning wines are building a strong reputation among wine connoisseurs. Cuttaway Hill's range of premium quality table wines artfully blend traditional and new world wine styles and include classic varieties that are full flavoured and combine cool climate complexity and wide appeal to represent the unique terroir that is the Southern Highlands and Cuttaway Hill.
Cuttaway Hill's focus is on quality and a commitment to a true expression of the terroir and unique climate of the Southern Highlands region. The regions long cool growing conditions accentuates the complex and intense varietal characters, to produce elegant and balanced wines. A combination of new and old world techniques provides the balance suitable to the unique cool climate grapes produced in the region. The winemaking team assesses each parcel of grapes for its strengths which are then optimised to produce wines of distinction and quality.The winemaking focus is on allowing the wines to symbolise the unique terroir of each vineyard block and variety. Techniques such as cold soaking, saignee, lees stirring and oak ageing all play an integral part in highlighting the cool climate characters that are the trademark of Cuttaway Hill. Each vintage a broad range of wines including, Sauvignon Blanc, Pinot Gris, Chardonnay, Semillon Sauvignon Blanc, Merlot, Cabernet Merlot and Pinot Noir are handcrafted in the award winning Cuttaway Hill style
