Saint Regis is a family-run boutique winery focusing on estate-grown shiraz, and locally sourced chardonnay and pinot noir. Each year the harvest is hand-picked by members of the family and friends, with Peter Nicol (assisted by wife Viv) the executive onsite winemaker. Peter, with a technical background in horticulture, is a self-taught winemaker, and has taught himself well, also making wines for others. His son Jack became the owner of the business in 2015 and took on the management of the newly constructed restaurant and wine bar. Peter continues to be the winemaker.
