1978 Marcel Amance Charmes Chambertin

It is ridiculous that a half bottle of this wine should be as good as it was. But, then, 1978 was truly one of those vintages of the century, with a style all its own. Moreover, the amount of ullage was minimal. The wine is exceptionally complex, with forest/stalk/whole bunch characters that might normally suffocate the fruit. No such issues here, however, plum, black cherry and strong spice all making their mark on both the bouquet and palate. The dish was quail, but squab, because of its greater flavour, would have been better still.
