Bright gold; the tough-to-remove cork had prevented ullage and oxidation. Spice, mandarin and lime aromas lead into an unexpectedly rich and mouthfilling palate. Ripe citrus flavours lead the finish, with soft but persistent acidity. Best of all, it shows no sign of drying out, and was a great match with a long, slowly cooked pork hock that fell off the bone yet didn't break up, strands of glutinous skin holding the dish together.
