Dr Brian Freeman has spent much of his long life in research and education, in the latter role as head of CSU’s viticulture and oenology campus. In 2004 he purchased the 30-year-old vineyard previously known as Demondrille. He has also established a vineyard next door, and in all has 14 varieties that range from staples such as shiraz, cabernet sauvignon, semillon and riesling through to the more exotic, trendy varieties such as tempranillo, and on to corvina and rondinella. He has had a long academic interest in the effect of partial drying of grapes on the tannins and, living at Prunevale, was easily able to obtain a prune dehydrator to partially raisin the two varieties.
