Dick and Dib (Elizabeth) Simonsen began the planting of their shiraz (with five clones) in 1994, intending to simply make wine for their own consumption. With all five clones in full production, the Simonsens have a maximum production of 200 cases, and accordingly release small quantities of Shiraz, which sell out quickly. The vines are hand-pruned, the grapes hand-picked, the must basket-pressed, and all wine movements are by gravity.
