This virtual winery was established by Peter Mornement. His philosophy (and business plan) was simple: to develop a portfolio of high quality, high value shiraz from six premium shiraz-producing regions. Each wine would be made by a winemaker in that region with an established reputation, and a simple instruction from Peter: buy the best fruit you can, and use the new oak of your choice. The quantity of each wine made will be 650 dozen bottles. He has joined forces with John Ellis (of Hanging Rock) for Heathcote and Kym Teusner for Barossa Valley wines. Palmarium (Latin for outstanding), is the name of our virtual winery and Exemplar (Latin for original), is the name we have given to our Super Premium Shiraz.
A Virtual Winery is one where there is no vineyard or winery; the only things owned by a virtual winery are oak barrels and the wine inside them.
A winemaker is contracted to make the wine. Grapes are purchased from a vineyard. The wine is stored in your barrels in the winery. Following a suitable time for ageing the wine is bottled, labelled and sold.
Being a Virtual Winery enables you to make wine anywhere, with the winemaker of your choice. Should we wish to make a Barossa Valley Super Premium Shiraz, we select a winemaker who has the demonstrated ability to produce an award winning wine. The winemaker will select the best fruit for the job and will also specify the type of oak to be used.
