Greenhill

Situated on a former strawberry farm, Greenhill Wines is a winery, vineyard, cellar door and cafe run by Drs Paul and Penny Henschke. Paul is a former AWRI scientist and Affiliate Professor of the University of Adelaide, Penny is a former wheat research scientist. Set in a restored 1880s settlers cottage on a ridge overlooking their estate vines with Piccadilly Valley, Mount Bonython and the Mount George range in the distance, Paul creates a range of estate pinot-based sparkling wines as well as estate and Piccadilly Valley-sourced white and red table wines. Being a wine microbiologist, Paul likes to exploit yeast in creative ways to enrich flavour complexity.
