XO Wine Co

This is the busman’s holiday for winemakers Greg Clack (Chain of Ponds) and Kate Horstmann (Project Wine). Evenings and spare time are devoted to XO, launched in ’17 when they converted their shed into a winery.  Their raison d’être revolves around small-batch, single-vineyard wines from growers in the Adelaide Hills and McLaren Vale. The initial range of grenache, barbera, chardonnay and gamay has since grown to include riesling, pinot gris and fiano, amongst others. The winemaking minimises wine movements, protecting freshness. -JAMES HALLIDAY
