John and Yvonne Herriot have the clearest possible vision statement for their vineyard and winery. The fact that the 13ha vineyard moved to biodynamic practices in 2000, and was Demeter certified in '05, is but a reflection of their desire to grow grapes and make wine with as little human intervention as possible, consistent with the aim of continuous improvements in the health and vitality of their soil and vines, and the minimisation of additives or processing aids in the winery. It's not an easy road to follow, particularly when there is a positive acceptance of the impact of changing weather from one vintage to the next. If the weather is ideal, all is fine, but it takes a steady hand and a firm commitment to bend to the will of the weather gods.
