Flying Fish Cove has two strings to its bow: contract winemaking for others and the development of its own brand. Long-serving winemaker Simon Ding had a circuitous journey before falling prey to the lure of wine. He finished an apprenticeship in metalwork in 1993. In ’96 he obtained a Bachelor of Science, then joined the Flying Fish Cove team in 2000. Exports to the UK, the US, Canada and Malaysia.
Flying Fish Cove is located 25 kilometres north of the Margaret River township along the renowned Caves Road in the Wilyabrup sub regional area. The winery was constructed in 2000 and carried out its first vintage in 2001. Next door to the winery is the Wildberry Farm Vineyard, a 25-hectare vineyard planted in 1997 by some of Flying Fish Cove’s shareholders. It is the main fruit source for the brand. The philosophy at Flying Fish has always been to “Capture the quality of the fruit produced in the vineyard to create an outstanding range of wines showing intensity and freshness, and embrace the best of Margaret River.” This philosophy has remained true with fantastic results in wine shows and press reviews throughout the years, particularly with the reds. Accolades include multiple trophies, golds, silvers and countless bronze medals. The full range consists of 12 wines with an indicative retail price range of $18 to $95.
