John Frazer has set up a contract sparkling wine business, called the Champagne Shed, although the winemaking is done offsite. He makes the Frazer Woods wines from 2ha of estate-grown shiraz; the white grapes for the pinot chardonnay sparkling are purchased from others. The wines are sold through the Margaret River Wine Cellars and the Witchcliffe Liquor Store.
Frazer Woods vineyard was established in 2016 and is family owned and operated by John and Jan alongside their three sons Tom, James and Nick. The vineyard is situated in the highly sort after Wilyabrup sub region of Margaret River – a world-renowned wine region infamous for producing high quality wines. Our Shiraz is smooth and sophisticated with beautiful aromatics that complement a persistent length on the palate. Our sparkling wines are crafted by the méthode traditionnelle and spend between five and 10 years on lees before release. Here at Frazer Woods bottle fermentation transforms still wine into sparkling wine - hence the name prisede mousse, which translates to ‘capturing sparkling wine’. We craft our wines by the méthode traditionelle - adding a sweet solution, known as the liqueurde tirage, to the base wine, and then sealing the wine into bottles with a crown cap and transferring them to the cellar where they are stacked for maturation. Secondary fermentation takes place inside the bottle, occurring when the yeast consumes the sugar and transforms it into alcohol and carbon dioxide, releasing esters that contribute to the final sensory profile. Deep inside the cellar, protected from the light and kept at a constant temperature of around 12 degrees, the wine embarks on a long period of maturation - an all-important process of aging that is the main distinction of our winemaking.
